Ingredients
¾ lb green beans, washed & trimmed
1 tbsp EVOO
1 tea red wine vinegar
1 tea minced shallot
1 tbsp chopped fresh parsley
Salt & pepper
Preparation
Bring a medium saucepan of salted water to a boil. Add beans and cook for 2 minutes. Drain, cover beans with cold water and let sit until cool. Drain and pat dry.
Mix beans, oil, vinegar, shallot, and parsley, adding salt & pepper to taste. Serve at room temperature.
