Ingredients

1&1/2 # green beans

3/4 C olive oil

1/2 C mint leaves - chopped

1/4 C white wine vinegar

3/4 t salt

1/2 t pepper

1/2 t garlic

1 C chopped toasted walnuts

1 C diced red onion

1 C feta cheese

Preparation

Blanch green beans until crisp/tender and rinse under cold water. Add next 6 ingredients to food processor or blender and blend. Toss in walnuts and red onions and mix. Add feta last and mix.
