Ingredients

1-1/2 lbs fresh green beans

Kitchen string

8-10 sprigs thyme

2 tbl butter

Salt & pepper

1/2 cup pine nuts, lightly toasted

Preparation

  1. Steam green beans for 3-4 minutes, until cooked but still firm. Plunge beans into ice water to keep their green color & stop them from cooking.
  2. Using kitchen string, make bundles of about 6-8 beans & a sprig of thyme.
  3. Heat butter in a sute pan until nutty brown. Add green bean bundles & reheat for about a minute. Season with salt & pepper. Top with toasted pine nuts.
