Ingredients
1-1/2 pounds fresh green beans
Kitchen string
8-10 sprigs fresh thyme
2 tablespoons butter
Salt & pepper
1/2 cup pine nuts, lightly toasted
Preparation
Steam green beans for 3-4 minutes until cooked, but still firm. Plunge beans into ice water to keep their green color and stop them from cooking. Using kitchen string, make bundles of about 6-8 beans and a sprig of thyme. Heat butter in a saute pan until nutty brown. Add green bean bundles and reheat for about a minute. Season with salt & pepper. Top with toasted pine nuts.
