Ingredients
3 cups zucchini cut in 1/2 slices
1/2 cup chopped onion
1/4 cup olive oil
16 oz. tomatoes, cut up
2 Tbsp chopped fresh or 1 1/2 tsp dried mint
2 Tbsp chopped fresh dill or 1 1/2 tsp dried dill weed
3/4 tsp salt
1/3 tsp pepper
1/2 cup yogurt plain
8 oz. macaroni,cooked
4 oz. feta cheese
Preparation
In a large skillet saute zucchini and onion in oil until tender, about 5 min. Add tomatoes, mint, dill, salt and pepper, cover and simmer 15 min. Stir in yogurt, cook 3 min. Serve over noodles, sprinkle with feta.
