Ingredients

4 large red beets

1/4 cup vinegar

3-4 tbs sugar

1 cup 0% Plain Greek Yogurt

1/4 cup assorted greek olives

1 onion

1 cup water

Preparation

Slice onions.Cook beets in boiling water. Soak them in vinegar/water/sugar/onions overnight. The next day, dice the beets and let them continue to soak. Add the beet/onion combination with as much liquid as you please to the greek yogurt. Top off with greek olives.
