Ingredients

1 lb. white mushrooms, thinly sliced

2 cups shredded Swiss cheese

8 green onions with tops, thinly sliced

2 tablespoons chopped green bell pepper

3/4 cup olive oil

1/4 cup balsamic vinegar

2 tablespoons Greek Seasoning

1 lb. baby spinach leaves, chilled

2 cups fresh strawberries, halved

Preparation

Toss first four ingredients together in a large bowl. Stir olive oil, vinegar and seasoning together in a small bowl. Pour over first mixture. Toss. Cover and chill one hour. Just before serving, place spinach and strawberries in a large bowl. Add mushroom mixture. Toss gently until evenly coated. Serve immediately.
