Ingredients
1 Cup Quinoa
2 Cup Water
1 1\2 Teaspoon Salt
2 Tablespoons Olive Oil
2 Tablespoons Lemon
¼ teaspoon Ground Pepper
¼ cup Kalamata Olives, pitted and chopped
½ cup Garbanzo Beans, rinsed
¼ cup Tomato sliced
½ cup Feta (crumbled)
2 teaspoon Basil (chopped)
Preparation
- Wash Quinoa
- Stir Together Water, ¾ tsp. Salt, and Quinoa in a Saucepan. Simmer uncovered until Quinoa is tender and germ starts to separate from grain about 20 minutes.
- Drain well in sieve and transfer to medium bowl.
- Cool Quinoa. (15 minutes)
- While Quinoa is cooling, stir together lemon, basil, pepper, tomato in small bowl.
- When Quinoa is cool, stir lemon mixture, garbanzo, olives & feta together with the Quinoa. Serve!
