Ingredients

Coarse salt and pepper

1 lb. gemelli pasta

2 tbsp olive oil

1 lb. peeled and deveined medium shrimp

4 cloves garlic, minced

1 1/4 cup greek yogurt

1 tbsp fresh lemon juice

1/2 cup loosely packed fresh mint, finely chopped

1/3 cup kalamata olives, chopped

Preparation

  1. In a large pot of boiling water, cook pasta until al dente.
  2. Meanwhile, in a large skillet, heat oil over medium heat. Add shrimp, season with salt and pepper. Cook until just opaque throughout, about 3 minutes. Transfer to a large bowl.
  3. Add garlic, 2 tbsp water to bottom of the skillet and cook until the garlic is tender, scraping up the bits (about 2 minutes). Transfer to bowl with shrimp.
  4. Add pasta, yogurt, lemon juice, mint, and olives. Season with salt and pepper. Toss to combine.
