Ingredients
1 medium head cabbage (shredded)
5-6 stalks celery (chopped fine)
1/2 large green pepper (chopped)
16 oz. herring fillets (cut into small pieces)
1 can flat anchovies (cut into very small pieces)
8 oz pitted Greek olives (chopped)
Wine Vinegar
Extra-Virgin Olive Oil
Sugar or Sweetener
Preparation
Combine all ingredients in large bowl.
Stir in approx. 3/4 cups each of oil & vinegar.
Add sweetener to taste (remove tang of vinegar).
Cover and refrigerate; stir occasionally.
Ready to serve in 1-2 days.
