Ingredients
1 large cucumber, peeled, seeded and diced into 1/4 to 1/2-inch chunks.
Half a red onion very coarsely chopped.
Half a pound cherry tomatoes sliced in half.
1/3 cup sliced Greek kalmata olives.
4 oz. Feta Cheese, crumbled.
Dressing:
1/3 cup olive oil
Juice of one lemon
1 t. fresh grated lemon peel
1.5 t. greek oregano
salt and pepper to taste
Preparation
Toss first six ingredients together in a large bowl.
Stir seasonings into the olive oil, (salt, pepper, lemon peel, oregano). Whisk lemon juice into the olive oil mixture until it forms an emulsion.
Pour over the vegetable mixture and toss to coat. Let chill for about 2 hours before serving. Dressing can be made ahead of time and tossed over vegetable mixture prior to serving. Can be served tossed with mixed greens and toasted pita bread for a main course.
