Ingredients
Marinade:
1/4 cup EVOO
1/4 cup red wine
2 T fresh lemon juice
1 T dried oregano
1 T dried mint
2 very large cloves garlic crushed
1 bay leaf crumbled
1-1/2 lbs. boneless country ribs, excess fat trimmed, and cut into 1-1/2" cubes

Preparation
In a medium bowl whisk together marinade ingredients. Add cubed pork and toss to coat. Cover and refrigerate at least one hour or as long as overnight.
Skewer 6 pieces on each of 3 skewers, season with salt & pepper. Grill on high heat until cooked through a slightly charred, about 9 minutes.
