Ingredients

1 box bowtie pasta

1 1/2 cups chopped/seeded tomatoes

1 1/2 cups chopped/ peeled/ seeded cucumber

1 cup chopped/ pitted Kalamata olives

1 cup chopped fresh basil

1 4-6 oz pkg feta cheese/ crumbled

Vinaigrette:

1/3 cup red wine vinegar

2 heaping tablespoons dijon mustard

2-3 garlic cloves, finely minced

Salt and Pepper

1/2 tsp dried oregano

1/2 tsp dried thyme

1-2 tsps sugar

1/2 cup EVOO

Preparation

Mix all salad ingredients together in large bowl. Prepare vinaigrette in small bowl by adding together all ingredients then briskly whisking in EVOO. Pour vinaigrette over pasta. Let salad marinate and chill in refrigerator for 1 hour before serving.
