Ingredients

1 cucumber (chopped)

1 small red onion (chopped)

2 Cups halved grape tomatos

.5 Cup quarterd Kalamata olives

.25 Cup White wine vinegar

2/3 Cup Olive oil

2 tablespoons dijon mustard

1 clove minced garlic

1 teaspoon parsley

1 teaspoon oregano

1 cup crumbled feta cheese

12 ounces of penne pasta

Preparation

Cook pasta and cool. Chop vegetables. Mix vinegar, olive oil, dijon mustard, garlic, parsley, and oregano. Pour over cooled pasta. Add chopped vegetables and feta cheese and toss.
