Ingredients
1 package Greek Isle Olive Oil Blend Mix from Gourmet Creations
1/2 cup olive oil
1/4 cup balsamic vinegar
1/4 cup red wine vinegar
3 cups cooked Rotini Pasta or Bowtie Pasta
1 cup fresh Portabella Mushrooms, Sliced
12 cherry tomatoes, sliced in half
1 cup red and green bell peppers
3/4 cup crumbled Feta cheese
1/2 cup chopped red onion
1/2 cup whole black olives
1 cup sliced pepperoni in thin strips
Optional: Add 1/2 cup sundried tomatoes
Preparation
- Combine all veggies in a bowl with pasta and set aside.
- Mix package of Greek Isle Olive Oil Blend with 3 Tbsp of water and let sit 5 min. Then mix it with 1/2 cup olive oil and add balsamic and red wine vinegar to it and mix well.
- Pour seasoning mixture and oils over pasta and toss well. Cover and refrigerate overnight for flavors to combine. Next day serve. Enjoy!
