Ingredients
6 pita breads-cut each into 4 wedges
8 oz. crumbled feta cheese
1/4 c. chopped Kalamata olives
1/4 c. chopped red peppers
1/4 c. chopped fresh basil
2 T. fresh lemon juice
1 T. black pepper
2 T. minced garlic
Extra virgin olive oil
Preparation
Pre-heat oven to 350 degrees. Lightly spray a cookie sheet with non-stick cooking spray. Lay pita wedges on cookie sheet. Lightly brush pita’s with olive oil. In a bowl, mix feta with olives, red peppers, pepper, lemon juice, garlic, and chopped basil. Place a tablespoon of filling on each pita wedge. Drizzle with more olive oil very lightly. Bake for 15 minutes or until cheese starts to brown. Serve hot.
