Ingredients
1 pound dry white beans
1 large onion,diced
8 medium plum tomatoes,peeled and diced
2 clove garlic clove,minced
2 leaf bay leaf
5 cup water
2 cup fat-free chicken broth
1/4 cup olive oil
2 inch piece of orange rind
salt and freshly ground pepper
Preparation
Drain and rinse beans that have been soaking overnight. Place in a pot cover with water and simmer till tender. Drain and set aside. Add olive oil in pot, saute diced onion 2 minutes add minced garlic saute 1 minute. Add diced tomatoes and chicken broth,and the beans stir, bring to boil then simmer till beans are very soft,add water if needed. Salt and pepper to taste.
