Ingredients
1 pound ground beef
1 pound ground pork
2 Bratwurst Italian sausages
2 cups stale Italian bread crumbs
1 8oz pkg fancy shredded 6 cheeses Italian cheese
2 cloves garlic, minced
2 eggs
1 tablespoon fresh chopped Italian flat leaf parsley
1 tablespoon fresh chopped basil
1-1 1/2 cups lukewarm water
1 cup olive oil
1 tablespoon of Kosher salt (to taste)
Pepper to taste
Preparation
- Remove sausage casing from bratwurst
- In a large mixing bowl, combine beef, pork, bratwurst, garlic, eggs, cheese, parsley, basil, olive oil, salt and pepper
- Pour 3/4 cup of water into bread crumbs and allow to soak for 2 minutes
- Add to meat mixture and begin kneading mixture together
- Slowly add the remaining 3/4 cups of water and kneed thoroughly to combine all ingredients
- Form mixture into golf ball sized or large meatballs and place on cookie sheet
Grilling:
Place on grill on LOW temperature and keep lid closed (ideally dome temp. should be at 350F). Rotate meatballs every 2-3 minutes and remove when done (be careful not to overcook).
