Ingredients

4 c all-purpose flour

2 t baking powder

1/2 t baking soda

1/2 t salt

2 t ground nutmeg

1/2 t ground cardamom

1/2 ob (2 sticks) butter, softened

2 c sugar

4 large eggs, lightly beaten

8 very ripe bananas, crushed

2 t pure vanilla

2 c coarsely chopped walnuts

Preparation

preheat oven to 350 grease and lightly flour 2 9x5x3 loaf pans combine flour, baking powder, baking soda, salt, nutmeg, and carmamom in a large bowl and stir cream together butter and sugar in sparate bowl with an electric mixer until well blended. Slowly add beaten eggs while continuing to beat. Add bananas & vanilla & stir. Slowly add flour mixture to butter mixture & stir just until dry ingredients are moist and blended. Do not overmix. Fold in the walnutes & stir just to blend. Pour batter evenly into prepared pans & let it settle to the sides; tap pans on the counter a few times to even out batter. Bake 1 to 1 1/4 hrs or until the bread rises and a toothpick inserted in center of each loaf comes out clean. The bread will be slightly brown & cracked on the top. Let rest for 10-15 minutes before removing from the pans. Serve warm or place on a baking rack to cool.
