Ingredients
1/2 Cup of Canola Oil
1 Cup of Sugar
2 Eggs
2 Cups of Plain Flour
1/2 Teaspoon of Baking Powder
3/4 Teaspoon of Backing Soda
1/2 Teaspoon of Salt
1/4 Cup of Milk
1 Teaspoon of Vanilla extract
1 Cup of Mashed Banana
Optional-
1/2 Cup of Chocolate chips or a mix of cranberries, walnuts and chocolate chips.
Preparation
Preheat oven at 360* Canola oil and sugar, add eggs and beat. Add sifted flour with baking powder, baking soda and salt alternately with milk, vanilla and bananas. (add chocolate, cranberries and walnuts if it is wanted) Pour into well-greased medium sized loaf pan (8.5 x 4 is recommended). Bake at 350* for 1 hour (+ 10 more minutes if needed) Or until inserted toothpick comes out dry. Enjoy!
