Ingredients

1 lb ground beef (sirloin or chuck)

1 egg

1/2 cup bread crumbs (or make your own)

1/2 small onion (minced)

1 large garlic clove (grated)

3-4 slices of bacon

Add to taste (I usually add between 1/2 - 1.5 Teaspoon of each depending on flavor profile I’m creating but each can be adjusted to preference):

Salt (~1/2)

Pepper (~1/2)

Basil (~1)

Oregano (~1)

Parsley (~1.5)

Worcestershire sauce (~1/2)

Preparation

Preheat oven to 400 degrees.

Combine all ingredients except for bacon in a bowl and mix well with hands. Shape meat into loaf and place on shallow rack over a pan (this helps circulate the air underneath).

Cover top of loaf with strips of bacon.

(Optionally, this can be combined with cut potatoes to roast, filling the bottom of pan)

Cook for 45 minutes or until cooked through. Slice and serve hot.
