Ingredients

2 eggs

1 cup flour

1 cup cornmeal (yellow)

1 cup milk

2 tsp baking power

1 tsp salt

1/2 cup sugar (scant)

1/4 cup oil (olive oil is nice)

Preparation

Preheat oven 350.

Mix it all together. Grandma used a fork, but a whisk works, too. Don’t over mix!

Heavily grease a cast-iron skillet (9-11 inches). Grandma used Crisco, but it also works with olive oil.

Bake 30 minutes (until brown on top)
