Ingredients
1 pound butter
1 cup sugar
4 cups all-purpose white flour (or use 2 cups white, 2 cups whole wheat flour)
2 tsp. vanilla
1 cup coconut
Preparation
Cream butter and suger in large bowl using electric mixer. Add flour and vanilla. Mix to blend. Stir in coconut.
Place rounded teasponfuls on cookie sheet. Bake at 325 for 25 minutes or until beginning to brown.
Cool on wire rack.
