Ingredients
1 lb ground beef (or ground beef & ground pork)
1/2 medium onion
2 cloves garlic, minced
1 1/2 c fresh spinach
1 1/4 T dried parsley
1/4 t salt
1 pinch black pepper
5 T grated parmesan cheese
1 slice bread OR 1/4 c bread crumbs
2 eggs, well beaten
Preparation
If using bread, grind the bread with the parmesan.
Cook the meat, onion, and garlic in a large skillet until crumbly and evenly browned. Drain. Stir in the spinach and cook until wilted, about 1 to 2 minutes. Remove from heat and allow to cool 10 minutes.
Transfer to a large bowl. Stir in the parsley, salt, pepper, cheese and bread crumbs. Add the eggs and mix well. Run the filling through a grinder or food processor until smooth.
Fill ravioli while still warm.
