Ingredients

3 or more cloves fresh garlic

1 tsp dried rosemary (or fresh)

3/4 tsp dried thyme

1/2 tsp pepper

1/2 tsp salt

dash of olive oil

Medium sized flank steak

Preparation

Combine first six ingredients in a mortar and pestle and mash together.

Rub flank steak with olive oil first, then apply rub/paste on both sides of meat. Place on platter, cover with Saran, and refrigerate at least thirty minutes prior to grilling.

Ideally, flank steak should be served rare to medium rare. So grilling time is brief. Allow meat to sit after grilling (3-5) minutes under foil tent. Slice at an angle, across the grain and thinly! Serve immediately.
