Ingredients

2 oz. white rum

5 oz. club soda

3 oz. mint syrup (see recipe below)

juice of half a lime

garnish: torn mint leaves, lime wedge

for syrup: 1 cup water, 1 cup granulated sugar, 20-30 mint leaves

Preparation

Fill tall glass with crushed ice. Add all ingredients and garnishes and stir. Serve with a stick of sugar cane as a swizzle if desired.

For Syrup: Combine the sugar, water and mint leaves in a saucepan. Boil for about 15 minutes until all sugar is dissolved and mint has infused the mixture. Cool completely. Store unused portion covered in the fridge.
