Ingredients

1 medium onion, chopped

water

1/2 bag red kidney beans, washed

salt, pepper, to taste

a little oregano

1/2 lb. small elbow macaroni

Preparation

Saute onion in a little oil. Fill sauce pan 3/4 full with water, add kidney beans to pan. Add salt, pepper, oregano, and bring to boil. Continue to boil briskly for 2 minutes. Turn off the heat, Let stand for 1 hour. Turn on heat, cook slowly, fill pan with water. Cook until beans are soft. Add small elbow macaroni, (“Ditalini”), and cook until macaroni is soft.
