Ingredients
4 eggs, well beaten
2 cups sugar
1 cup oil
2 teaspoons coconut extract
3 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 cup buttermilk
1 cup coconut
GLAZE**:
1 cup sugar
1/2 cup water
2 Tablespoons margarine
Preparation
Mix eggs, sugar, oil and coconut extract. Add flour, salt, baking soda, baking powder, mix. Add buttermilk and coconut mix. Grease 2 loaf pans, bake at 350 for 50 minutes or until brown.
Prepare glaze by boiling glaze ingredients for 5 minutes then add 1 teaspoon coconut extract.
When cake is finished, ladle the glaze on the top and sides
