Ingredients

8 quarts cold water

2 Tbsp salt

1 ham bone or smoked turkey carcass

1 tsp pepper

3 one pound packages green split peas

2 onions chopped fine

3 ribs of celery chopped

1/2 cup carrots sliced

Preparation

Rinse and remove any black or damaged peas. Add peas, salt, pepper and ham or carcass to water in large pot. Bring to boil. Reduce heat to simmer. Skim any foam. Add onions and celery Cook 3-4 hours until peas are soft. Remove bones Add carrots and cook till tender, about 30 min Great leftover, may be frozen
