Ingredients

3 1/2 c flour

3 tsp. baking powder

1 tsp. baking soda

1 tsp. salt

3/4 c shortening or softened butter

1 1/2 c sugar

3 eggs

3/4 c milk

1 1/2 tsp. vanilla

2 c very ripe bananas, mashed and mixed with

2 Tbl. lemon juice

Preparation

Preheat oven to 350 degrees. Grease two regular loaf pans. Combine flour, baking powder, salt, and baking soda in large bowl. Cream butter or shortening with sugar. Add eggs, one at a time then add milk and vanilla. Stir in bananas. Add banana mixture to flour mixture and mix just to combine. Divide batter evenly between loaf pans and bake for 1 hour or until tester inserted into center of loaf comes out with a few moist crumbs. Cool, slice, and serve with butter.
