Ingredients

Bacon (2 strips cut into 1/2" pieces)

Onion (1 small, diced)

Whole kernel corn (1 cup)

Evaporated milk (1 can)

Fish or chicken stock/broth (2 cups)

Corn starch (2 tsp)

White fish (1 lb, boneless, skinless, cut into 1/2" pieces)

Potatoes (2, cooked and diced)

Parsley (2 tsp)

Salt and pepper (to taste)

Preparation

Saute bacon and onion, adding corn, evaporated milk, and black pepper. In a small mixing bowl, blend corn starch and stock/broth until smooth. Wisk contents of bowl into the pot and stir until thick. Stir in fish and potatoes, cook until fish is done.
