Ingredients

1 cup water

1/2 cup butter

1 tsp salt

1 cup flour

4 eggs

1 cup grated gruyere cheese

1 egg fork beaten for topping

1/4 cup gruyere cheese for topping

Preparation

Bring water, butter and salt to a boil.

Add flour all at once. Stir briskly until smooth and pulls away from sides of pan. Remove from heat.

Add eggs 1 at a time beating thoroughly with a spon after each addition.

Add first amount of cheese. Work into mixture. Using greased pie plate, pile dough into puffs around edge. Fill in center. Brush with egg.

Sprinkle cheese on top. Bake in 400F (205C) for 30-35 min.
