Ingredients
8 fresh green or brown Figs
8 small slices of Caprikorn Farms Gouda cut to fit the figs
8 slices of thinly sliced Procieutto d’Parma or bacon
1 cup Balsamic Vinegar

Preparation
If using bacon cook until half done but not crisp - drain and cool on paper towel If using wooden toothpicks, soak for 10-15 minutes in warm water Reduce 1 cup of Balsamic vinegar in small saucepan over medium heat down to 1/2 cup or until it is thick and syrupy enough to coat the back of a wooden spoon. Cut a deep vertical slit in each fig and stuff with a piece of Gouda Wrap with prosciutto or bacon and secure with toothpick Place figs on a baking sheet and put under the broiler for 5-6 minutes (up to 10 minutes if using bacon) until cheese is melted and wrapping is crisp
