Ingredients

2 Tbsp unsalted butter

2 Tbsp onion, finely diced

1 tsp dried oregano

2 tsp dried thyme

1 Cup heavy cream

1 Tbsp all-purpose flour

1 Tbsp sherry

¾ cup Gorgonzola cheese

Salt & pepper to taste

Preparation

In a small saucepan, melt butter. Add onions, oregano & thyme. Whisk in flour. Cook flour for 1 minute. Add heavy cream and sherry and continue to whisk. Bring mixture to a simmer and allow flour to cook out, about 2 minutes more. After cream simmers, add Gorgonzola to melt. Season with salt & peper.
