Ingredients
2oz short grain pudding rice
water to cover
Pint milk
Large tin evaporated milk
good splash vanilla essence
heaped teaspoon ground cinnamon
4 ozs sugar (or to taste)
Pureed cooking apple - either baked (as suggested above, or cooked and pureed in a saucepan.
Preparation
Rinse the rice in a sieve,place in medium sized saucepan and use enough water just to cover the rice
Cook the rice on a high heat until the water has been absorbed, stirring all the time
Add all the ingredients except the sugar.
Cook on high heat until just boiling, turn down to simmer and cook for about 15 minutes, or until the rice is soft, stirring frequently
When the rice is soft, remove pan from heat and stir in the sugar and baked apple - taste and adjust sweetness if necessary
Pour into serving dish nd serve either hot or cold- with fresh or tinned fruit on on its own
