Ingredients
1 lb. salmon filet
2 slices lean bacon, chopped
1/4 c. diced round onion
2 stalks green onion or chives, chopped
1 Tb chopped celery
1 clove garlic, minced
1 Tb chopped cilantro
Pinch white pepper
1 Tb soy sauce (or more to taste)
Oil for sauteing
Preparation
- Lightly salt salmon if desired. Saute bacon in oil in pan. cook until almost done. Add garlic, onion, celery, cilantro, green onion, and saute for 2 min. Add soy sauce and white pepper. Add a tsp of water if too salty.
- Place salmon on heavy duty foil. Add cooked bacon mixture on topo. Fold top over & bring ends of foil toward center to seal. Bake @ 375 degrees for 40 min or until salmon flakes. More soy may be added when serving.
