Ingredients

Salad:

2 hearts romaine, torn

1 tomato, diced

3/4 c. corn

2 green onions, diced

6 mini-peppers, or 1 red or orange bell pepper, sliced

2 tbsp cilantro, chopped

1/2 bag pre-cooked chicken breast strips, or 2 c. cooked chicken

Dressing:

1/2 firm-ripe California avocado, quartered, pitted, and peeled

1/2 c. fat-free yogurt

2-3 tbsp fresh lime juice

1 garlic clove, finely chopped

3/4 teaspoons salt

1/4 teaspoon black pepper

Preparation

Combine all salad ingredients. Blend all dressing ingredients and add 1 tbsp (or more) water to reach desired consistency. Enjoy guilt-free!
