Ingredients

3 yellow tomatos (@ 1 lb)

1 chipotle

1 T fresh, chopped ginger

1 t roasted garlic

1 T lime juice

1/2 t sugar

1/2 t kosher salt

Preparation

  1. Puree tomatos and drain excess water
  2. Puree chipotle, ginger and garlic and add to tomato puree
  3. Add lime juice, sugar, and salt and mix
