Ingredients

4 salmon steaks, 1 inch thick

1 Tbsp olive oil

1/2 tsp curry powder

1/2 tsp salt

1/2 tsp sugar

1/2 tsp crushed red pepper

1 cup slivered fresh apricots

1/4 cup apricot nectar

2 Tbsp rice vinegar

1 clove garlic, crushed

1 Tbsp apricot preserves

2 Tbsp slivered dried apricots

2 Tbsp sliced almonds

garnish- minced green onion and cilantro sprigs

Preparation

Brush the salmon steaks with the olive oil. Combine the curry, salt, sugar and pepper. Sprinkle onto both sides of the salmon steaks. Grill on a grill rack 5-6 minutes per side over high heat or till the salmon tests done. While the salmon is grilling place the rest of the ingredients in a small saucepan on the grill rack and cook till hot and well blended. Place the salmon steaks on a platter and spoon the glaze over top. Garnish with the green onion and cilantro.
