Ingredients

1 cup plus 2 tbs flour

2 tbs cornstarch

1 1/4 tsp baking powder

1/8 tsp salt

3/4 cup sugar

2 eggs, room temp

1 1/4 tsp vanilla

4 tbs butter

1/4 cup oil

1/2 cup milk, room temp

Preparation

  1. Preheat oven 350. Line muffin tin with liners
  2. In medium bowl whisk flour with cornstarch, baking powder and salt
  3. In a large bowl using a handheld mixer beat sugar with the eggs and vanilla extract at medium high speed until smooth and slightly thickened, about 3 min. Add butter and oil and beat until incorperated, scraping the bottom and side of bowl. Add dry ingredients and milk in 3 alternating batches, beating well between additions. Pour batter into tins 2/3 full
  4. Bake 20-25 min
