Ingredients
4+ oz sundried tomatoes, diced (drain if packed in oil, rehydrate if dried)
2 cloves garlic, finely chopped
5 parsley sprigs - finely chopped
1 green onion, finely chopped
1 pkg basil
1/4 tsp cayenne
1/2 tsp salt
pinch sugar
1/2 to 1 c olive oil
1 large goat cheese log
Preparation
Blend the chopped herbs and spices in a food processor. Add olive oil, blending again until smooth. Let herb mixture sit prior to serving, several hours or overnight. The flavors blend best if prepared a day in advance.
When ready to serve, pour over cheese and serve with crackers.
