Real Foods Corn Thins (something between a cracker and a rice cake - of course no trans fat - available at all our local health food stores). French or rustic loaf bread is a good substitute.

Goat Cheese,

Cucumber,

pepper to taste

Preparation

Prepare the cucumber by slicing thin. If you are making these ahead of time, remove the seeds to keep the corn thins extra crunchy. I recently found some extra crunchy and tasty Japanese cucumbers at our local farmers market. These Japanese cucumbers seem to have less moisture then conventional cucumbers and did not need the seeds removed. Spread the goat cheese on the corn thins and place cucumber slices on top. Add freshly ground pepper to taste and place corn thin or bread slice on top to make a sandwich.
