Ingredients
Pie shell frozen or from scratch
14oz of chevre (goat cheese)
tablespoon of fresh thyme
1/4 cup heavy cream
2 large eggs
2 large sweet (vidalia) onions
tablespoon of olive oil
tablespoon of butter
teaspoon of salt
1/2 teaspoon of pepper
Preparation
Put oil and butter is large pan and add chopped onions,cook until golden brown.Set aside to let cool.In a large bowl add eggs,cream,thyme,goat cheese,salt and pepper.Fold into onions and pour into pie shell - cook for 35-40 mins at 350 degrees. Cut into 8 slices and serve over mixed greens with light vinaigrette and sliced cherry tomatoes. Enjoy - your friends will love you.
