Ingredients
Vinaigrette:
2 Tbs minced scallion
1 Tbs Rice Wine Vinegar
1 Tbs Lemon Juice
2 tsp Soy Sauce
1 tsp minced fresh Ginger
1/2 tsp sugar
1/4 tsp pepper
1/8 tsp salt
1/3 Cup Olive Oil
Salad:
3 Hearts chopped Romaine Lettuce
2 Tbs chopped Chives
1 Tbs Lime Zest
1/4 Cup crumbled Goat Cheese
1 Cup Grape Tomatoes, halved
1 tsp Goya Adobo Seasoning
(or mix garlic and onion powders)
1 clove Garlic, minced
1 Tbs Olive Oil
Preparation
Add all vinaigrette ingredients together in a jar. Shake well, about 1 minute. Set aside.
Place lettuce, goat cheese, chives & lime in salad bowl.
Heat Olive Oil in skillet on med-high heat. Add garlic and halved tomatoes. Sprinkle with Adobo seasoning. Stirring often, cook until tomatoes shrivel and reduce in size, about 4-5 minutes. Remove from heat.
Toss lettuce mix with desired amount of dressing. Add tomatoes and LIGHTLY toss to mix throughout.
Serve and enjoy!
Goes very well with Asian meats.
