Ingredients
1 sheet of ready rolled puff pastry
1 egg yolk
2 teaspoons of water
150g block of soft goats cheese
2 small roma tomatoes, thinly sliced
16 fresh basil leaves
2 tablespoons of virgin olive oil
Preparation
preheat oven to moderately hot, 200 - 210 degrees. cut the pastry into 4 squares, and fold the edges 1cm inwards, prick centre with a fork, place the pastry squares on an oiled oved tray, brush with combined egg and water. bake uncovered for 5 mins or until browned slightly. cut cheese into 12 slices, divide tomato, basil and cheese among pastry squares in alternate layers, bake uncovered for 5 mins or until just heated through, serve with a drizzle of oil.
