Ingredients
1 and 1/2 TBSP Butter
1/2 Bulb Garlic minced
1 shallot minced
3 cups portobello mushroom chopped
1/2 cup of fresh herbs (parsley, cilantro, rosemary, basil, sage)
Salt and pepper
250-300 grams goat cheese
4 fresh roma tomatoes, sliced.
Preparation
Melt butter on med-high heat, add minced garlic and shallot. Saute for 2 mins. Add chopped mushies. Saute for 5-7 mins. Transfer to a bowl and stir in chopped fresh herbs. Put goat cheese in a large mixing bowl and soften by pressing a ladle against the goat and the bowl. Add mushie mixture. Place on plastic wrap, length-wise and roll wrap around it. Chill for 20 mins. Form into whatever shape you want and put some fresh parsley on the outside! Serve with Crackers and fresh tomatoes.
