Ingredients
1 19 oz. can garbanzo beans, drained and rinsed
1 16 oz. pkg. shrink-wrapped Bellino Gnocchi
1/4 c. fruity olive oil
1 large garlic clove, pressed in garlic press
1/8 to 1/4 tsp. red pepper flakes (I like 1/8)
Grated zest of 1 lemon
2 T. or more fresh lemon juice (to taste)
Salt and black pepper to taste
1 t. coarsely chopped fresh rosemary
1/2 c. coarsely chopped Italian parsley
1 green onion, slivered
Preparation
Combine oil with garbanzo beans, garlic, red pepper flakes and grated zest of lemon. Warm together in low heat skillet or in serving bowl. Cook gnocchi in salted water according to pkg. directions. Combine gnocchi, ingredients in oil, parsley and green onion; lemon juice and salt and pepper, toss and serve.
