Ingredients
-3 tablespoons canola oil
-2 cups Toasted rice cereal
-roughly 1 and 1/3 cups Elyon Brand or other soy free vanilla marshmallows (gaps are okay, do not squeeze into measuring device)
-however much Theo Brand or other soy free 70% dark chocolate you see fit (be careful though as a lot can mess with the stickiness of the marshmallows, and therefore the stability of the treats)
Preparation
put the canola oil, marshmallows, and chocolate into a pan on the stove at medium heat (gas stove).
The chocolate will melt first.
Roll each marshmallow until it is thoroughly covered in oil and chocolate.
Once the marshmallows soften, cut slits in them and roll them once more so the chocolate gets inside.
Then stir until the entire contents of the pan becomes a thick liquid.
Remove pan from stove and add rice.
After thoroughly mixing, begin to compact the mixture by whapping it on all sides.
Let it cool enough to be cleanly cut into squares.
Serve immediately for softness, or place in the fridge for a tougher, more compact treat (i suggest the fridge).
