Ingredients

.75 C Rice Flour

.75 C Bean Flour

1 tsp Baking Soda

2 tsp Xantham Gum

1 tsp Salt

1 C Butter or Margarine

1.5 C Brown Sugar - packed

2 Eggs (or equivilant EnerG Egg Replacer)

1 T Water

.5 tsp Vanilla Extract

1.5 C Quick Oats - uncooked

Optional Additions-

1 C Butterscotch Morsels

or

1 C Chocolate Morsels

or

.5 C Morsels and .5 C Walnuts or Pecans

or

.5 C Morsels and .5 C raisins or dried cranberries

Preparation

PREHEAT oven to 375 degs.

GREASE cookie sheet(s)

COMBINE flours, baking soda, baking powder, xantham gum and salt in medium bowl.

COMBINE butter/margarine, sugar, eggs, vanilla and water in large bowl. BEAT until creamy. ADD dry ingredient mixture gradually. STIR in oats and morsels/nuts. DROP by tablespoonfuls onto cookie sheet(s) covered with parchment paper. BAKE for 10 - 12 minutes. COOL slightly, then remove cookies onto wire racks.
