Ingredients
Crust
3/4 buckwheat flour (or wild rice flour)
1/2 chestnut starch or starch acorn starch ( or arrowroot starch)
1/4 oat flour (or amaranth flour)
8 tbsp butter
3/4 tsp birch gum or maple gum powder (sugar gum tree gum)
1/2 cup + more apple cider is best but can use water
filling :
2 cups european apples choped (with skin on) or hawthorn crab apples
birch or maple sugar or poplar sugar ( sugar gum tree sugar)
(ground spicewood & carolina anise leaves crushed)
apple cider or cream
hazelnut extract optional
Preparation
combine dough ingredients
prepare apple filling mix all ingredients together bring to a slow boil cook till thick and apples jel but are not apple sauce .
roll dough out on a gluten free floured surface cut using a biscuit cutter spoon 1tbsp fillin in middle seal with a egg wash on the edges fold in half press sides down using a fork sprinkle with tree sugar and (and ground spicewood)
